Relentlessly driven by the potential of what our industry can achieve, here at Lyme Bay we strive to make the best wine, from the best grapes, from the best growers. Central to this is our love of all things coastal and West Country. Our grapes are selected and our wines crafted to reflect a natural affinity to the region’s renowned fish dishes and coastal vistas, both in style and character. The result; a range of still and sparkling English Wines that have captured the imagination of many and achieved incredible international award success.

Blanc de Noirs

Blanc de Noir sparkling wines are white wines made from just black grapes and our Blanc de Noirs is made from 100% Pinot Noir grapes. It is a rich and earthy wine with forward strawberry and cherry notes and a light toast finish.

  • Winemaking Notes

The Pinot Noir was handpicked on the 2nd of October 2014, which is relatively early for English Pinot Noir but 2014 was an incredibly warm and dry growing season. After a very gentle pressing, only the finest cut was transferred to tank for the Blanc de Noir primary fermentation after a natural, cold settle. Malolactic fermentation was completed sequentially and the wine was bottled the following spring for secondary fermentation. After a minimum of two years on lees the wine was riddled and the yeast disgorged before being allowed some cork time before release.
