Wimbledon is over now (well done Andy!) and if you are anything like us you’ve probably eaten your bodyweight in strawberries over the last few weeks.
If you fancy pampering your palate with something a little more delicate and subtle then how about indulging in the fresh taste of raspberries instead?
Taste of summer
Packed with fresh fruit and presented in a unique bottle with a wooden stopper, our Lyme Bay Winery Raspberry Reserve Liqueur is made from whole, hand-picked raspberries steeped in 40% ABV vodka. If left too long the drink actually loses some of its character, so when we think it's had enough time the mixture is diluted to 22% with water and sugar.
As well as being a luxurious taste of summer on its own, there are plenty of other lip-smacking ways to use it...
If you go gaga for granita, how about making your own boozy raspberry sorbet. Blend 500g of fresh raspberries with 100ml of water and mix until smooth. Strain through a fine sieve into a deep bowl. Put 100ml of water into a pan with 125g caster sugar stir over a medium heat until the sugar dissolves. Let the syrup cool before stirring into the raspberry purée, pour into a container, cover and freeze for 45 minutes. Spoon the mixture back into the blender jug, add a good glug of Lyme Bay Winery Raspberry Reserve Liqueur and give a few pulses to break up the crystals, then leave to freeze solid, stirring again a couple of times while it freezes.
Another grown up desert is raspberry vodka jelly shots. Make up your jelly according to the instructions on the packet, replace about half of the cold-water content with Lyme Bay Winery Raspberry Reserve Liqueur. Pour into ice-cube trays and leave in the fridge overnight to set.
For a sophisticated cocktail, pour 25ml of Lyme Bay Winery Raspberry Reserve Liqueur into a champagne flute or coupe, top up with our Lyme Bay Brut Reserve Sparkling English wine and drop a fresh raspberry into the glass.
If you prefer a longer drink, mix Lyme Bay Winery Raspberry Reserve Liqueur with lemonade in a tall glass with a sprig of mint.
