The rise of botanicals

You can’t move in the hipper bars in town without tripping over someone spouting about the rich and diverse flavours that the botanicals are bringing to their gin. Yes gin; the drink that in the 18th century was called ‘mother’s ruin’ because it was so cheap that its effect on family life was disastrous.

Secret recipes

These days gin has become the drink of choice for beard-toting hipsters, city slickers and discerning drinkers alike. This is partly because today’s production techniques are so so...

Don’t drink less, drink better!

Now that the indulgence of the festive season is over, many of us decide it’s time to take ourselves in hand and get stuck into a whole host of new year’s resolutions in a bid to get back into shape. One of the most popular at this time of year is the ‘Dry January’ trend, where you pledge to give up alcohol for the whole month to give your body a bit of a rest and ‘clear out’ your system.

But if you can’t face getting through the dark and chilly first month of the year without at least a few sips...

Time flies when you’re making wine

It was only 12 months ago that we wrote about how it is not very often that you can give English grapes ‘hang time’ to really concentrate the flavours, but here we are again with an amazingly dry September and October, and the grapes to show for it. The 2016 vintage has also had the benefit of a very warm and dry August which has allowed the grapes to reach full ripeness and beyond.

The right ripeness

The Bacchus grapes have come in with very high ripeness levels so we expect some aromatic still ...

Apple harvest approaches

English Romantic Poet John Keats described autumn as the ‘season of mists and mellow fruitfulness’, which certainly puts us in mind of our forthcoming apple harvest.

Here at Lyme Bay Winery we are passionate about keeping the skill of Westcountry cider making alive and use the pressed juice of locally grown traditional cider varieties such as Dabinett, Kingston Black and Yarlington Mill to make our award-winning ciders.

The apples for these come from The Somerset Cider Brandy Company, where Julian...

Grasp the nettle

We all remember the itchy pain of being stung by nettles as children, but if that hasn’t put you off this prickly plant then perhaps we can convince you it is a wondrous weed.

For starters, butterflies can’t get enough of it, which is good news for our native British species the Red Admiral and Painted Lady. Many people also consider nettles a tasty addition to a variety of dishes. They lose their sting when the leaves are boiled and add an earthy tang to soups and risottos.

"Winter is coming” as they say on Game of Thrones. Okay, yes, we know it’s actually spring, but as HBO’s hit drama finally kicks off its long-awaited 6th series, the UK has also seen a 30% uplift in sales of the show’s favourite drink – mead.

Firstly, what is it?

Mead is a delicious beverage made by fermenting honey and water with a range of different spices to create a wonderful flavour-rich drink.

How has Game of Thrones increased the popularity of mead?

In a word: awareness. As the show and books...

Birch wine back in stock

It’s the moment many of you have been waiting for: our ever-popular Birch wine is back in stock.

An English tradition dating back thousands of years, birch sap collection happens in early spring before any green leaves have appeared, as in late spring the sap turns bitter. Last year we sold out in record time – by July – because the short harvest season for the birch sap needed to make our Birch wine means the number of bottles we can produce is limited.

Tapping the sap is done by dri...

Here at the Winery we’ve been doing a bit of ‘refresh’ ourselves, with a new look for our quintessential cellar door shop, as well as a facelift for our iconic range of fruit wines.

Elderflower Adventures

Sourcing local ingredients is at the heart of much of what we do here at Lyme Bay. There’s birch tree tapping in March from a coppice down the lane to make our Birch Wine, and nettle picking in April to capture the new growth for our Nettle Wine, but nothing signals the approach of summer as much as elderflower picking in June and July from our own trees here at the Winery.

Our team enjoy sunny afternoons collecting the beautiful elderflowers from the hedgerows at a time their pollen is at its op...

A Sparkling Tradition

Fermented in-bottle, our Sparkling Fruit Wines are made in a similar way to what's called the 'traditional method' for sparkling wines, as used for both Champagne and Cava. Champagne can consist of three main grape varieties: Chardonnay, Pinot Noir and Pinot Meunier, and we combine a high quality Chardonnay juice with elderflowers/strawberries for our fruity sparklers.

The initial fermentation produces a wine that's aromatic, quite tart, and in the region of 10.5% to 11% ABV. To prepare the wine ...

The Mead Renaissance

Mead, believed to be one of the oldest alcoholic beverages in the world, is undergoing a huge revival in popularity.

The nectar of the gods, the golden liquor of poets, lovers and kings and thought by many an elixir of health, fertility and longevity, smooth and sumptuous mead is rumoured to have aphrodisiac properties and was historically presented to newlyweds to enjoy during what we now call their “honeymoon”.

Our range of five award-winning meads are fermented, blended and aged on site using o...
