The Somerset Cider Brandy Company were granted the first full cider distilling
license by HM Customs, in England's recorded history, in 1989. Their Cider
Brandy evokes all the magic and mystery of the West Country's proud cidermaking
and apple growing traditions.
In the Autumn, vintage cider apples are gathered, pressed and fermented
in huge oak vats. After three months the cider is distilled and clear
spirit known as Eau de Vie, or the 'water of life' is drawn off into barrels.
In the barrels the spirit slowly gains colour from the oak whilst a small
amount is lost through the wood- 'the angels share'.
After mellowing and maturing for several years it becomes a deliciously
smooth Cider Brandy.
